The kids love these mini pancake muffins. You can add whatever flavours you like, we use fruits, chocolate chips and even honey.
Ingredients
- 260g self raising flour
- 1 teaspoon sugar
- 30g butter, melted
- 2 eggs
- 300ml milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 180c. Put all ingredients in a stand mixer and beat until well combined.
- Pour the pancake mixture into a 12 hole, or 2 x 6 hole, muffin tin. Top with any extras if you are using them. Bake for 12-15 minutes, or until the pancake bites have cooked through.
- Let the pancake bites cool slightly before removing from muffin tin. Eat while still warm or at room temperature.
